Pozole Verde de Pollo
Pozole Verde de Pollo is a traditional Mexican soup with lots of bright flavors. It has tender chicken, hominy, and a rich green broth made with tomatillos and poblano peppers. Add some fresh, tangy toppings to make it a tasty and comforting meal. Ingredients: 2 lbs chicken thighs, boneless and skinless 2 cans hominy, drained and rinsed 1 large onion, chopped 3 cloves garlic, minced 2 cups tomatillos, husked and chopped 2 poblano peppers, seeded and chopped 1 bunch cilantro, chopped 1 teaspoon dried oregano 1 teaspoon cumin 8 cups chicken broth Salt and pepper to taste Toppings: sliced radishes, shredded cabbage, lime wedges, chopped cilantro, and diced avocado Instructions: Put chicken broth, chicken thighs, hominy, onion, and garlic in a large pot Once it starts to boil, lower the heat and let it cook slowly for 20 minutes, or until the chicken is fully cooked
