Pozole Verde de Pollo



Pozole Verde de Pollo is a traditional Mexican soup with lots of bright flavors. It has tender chicken, hominy, and a rich green broth made with tomatillos and poblano peppers. Add some fresh, tangy toppings to make it a tasty and comforting meal.

Ingredients:

  • 2 lbs chicken thighs, boneless and skinless
  • 2 cans hominy, drained and rinsed
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 cups tomatillos, husked and chopped
  • 2 poblano peppers, seeded and chopped
  • 1 bunch cilantro, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon cumin
  • 8 cups chicken broth
  • Salt and pepper to taste
  • Toppings: sliced radishes, shredded cabbage, lime wedges, chopped cilantro, and diced avocado

Instructions:

Put chicken broth, chicken thighs, hominy, onion, and garlic in a large pot

Once it starts to boil, lower the heat and let it cook slowly for 20 minutes, or until the chicken is fully cooked

Take the chicken out of the pot, shred it, and then put it back in

The poblano peppers, cilantro, oregano, and cumin should be added

Let it cook for another 15 minutes

Add pepper and salt to taste

Add lime wedges, chopped cilantro, diced avocado, sliced radishes, and shredded cabbage to the top of the hot dish
