Ultimate Roast Beef Sandwich with Creamy Chimichurri Sauce
Ingredients:
- 1 lb beef roast
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 2 tbsp red wine vinegar
- 1 tsp dried oregano
- Salt and pepper to taste
- 1/2 cup mayonnaise
- 2 tbsp chopped cilantro
- 1 tbsp lime juice
- 4 sandwich rolls
- Lettuce leaves
- Sliced tomatoes
- Sliced red onion
Instructions:
Warm the oven up to 190C 375F
Red wine vinegar, oregano, salt, and pepper should all be mixed together in a small bowl with olive oil
Spread the mix all over the beef roast
Put the roast in a roasting pan and roast it in an oven that has been heated up for about an hour, or until it's done the way you like it
Make the creamy chimichurri sauce by putting mayonnaise, cilantro, and lime juice in a bowl and mixing them together
Add pepper and salt to taste
Let the beef rest for a few minutes after it's done cooking before cutting it into thin slices
If you want, you can toast the sandwich rolls lightly after cutting them in half
On the bottom half of each roll, spread the creamy chimichurri sauce
Put down lettuce leaves, then tomato slices, red onion slices, and roast beef slices that are very thin
Place the top half of the rolls on top and serve right away
