Pumpkin Roll Bars
Ingredients:
- 1 cup canned pumpkin puree
- 3/4 cup granulated sugar
- 1/4 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons pumpkin pie spice
- 1/2 cup chopped nuts optional
- 8 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions:
Warm the oven up to 175F 350C
A 9x13-inch baking pan should be greased
Mix the pumpkin puree, granulated sugar, oil, eggs, and vanilla in a large bowl until everything is well mixed
Put the flour, baking soda, salt, baking powder, and pumpkin pie spice in a different bowl
After adding the dry ingredients one at a time, mix the pumpkin mixture until it is smooth
If you want, fold in chopped nuts
Pour the batter into the pan that has been prepared
Cream cheese and butter should be mixed in a different bowl until they are smooth
Mix in the vanilla and powdered sugar, then beat until the mixture is smooth
Put dollops of the cream cheese mix on top of the pumpkin batter
Mix the cream cheese and sugar into the batter with a knife
In a hot oven, bake for 25 to 30 minutes, or until a toothpick stuck in the middle comes out clean
Let it cool all the way down before cutting it into bars
