Keto Hot & Sour Shrimp Noodle Soup



A tasty and warming soup with a keto twist that has sweet shrimp, sour vinegar, and hot red pepper flakes. Great for a cozy Sunday dinner that's low in carbs and full of flavor!

Ingredients:

  • 1 lb shrimp, peeled and deveined
  • 4 cups chicken broth
  • 2 cups water
  • 1/4 cup apple cider vinegar
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon erythritol or preferred keto sweetener
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 teaspoon crushed red pepper flakes adjust to taste
  • 1 cup shirataki noodles, rinsed and drained
  • 1 cup sliced mushrooms
  • 1/2 cup bamboo shoots, sliced
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste

Instructions:

Set the chicken broth and water in a large pot on low heat

Put in soy sauce, garlic, ginger, erythritol, sesame oil, and red pepper flakes that have been crushed

Mix well

Put in the bamboo shoots, mushrooms, shrimp, and shirataki noodles

Cook on low heat for 5 to 7 minutes, or until the vegetables are soft and the shrimp turn pink

Add pepper and salt to taste

Before serving, sprinkle with chopped green onions
