Peanut Butter Oatmeal Sandwich Cookies



Delicious peanut butter and chocolate chip oatmeal cookies sandwiched between two layers of creamy peanut butter filling.

Ingredients:

  • 1 cup creamy peanut butter
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups old-fashioned oats
  • 1 teaspoon baking soda
  • cup chocolate chips

Instructions:

Set the oven to 350F 175C and heat it up

Put parchment paper on the bottom of a baking sheet

Put the peanut butter, brown sugar, eggs, and vanilla extract in a bowl and mix them together

Mix until everything is smooth and well mixed

Mix the oats and baking soda into the peanut butter

Mix until everything is mixed in evenly

The chocolate chips should be carefully mixed in

Using a spoon or cookie scoop, place round tablespoons of dough about 2 inches apart on the baking sheet that has been prepared

Using a fork, gently press down on each cookie to make a crisscross pattern on top

After the oven is hot, bake the cookies for 10 to 12 minutes, or until the edges are golden

After taking the cookies out of the oven, let them cool for 5 minutes on the baking sheet before moving them to a wire rack to cool all the way down

Place two cookies together with their flat sides facing each other

Spread a teaspoon of peanut butter on one cookie and then place the other cookie on top of it

To make the sandwich cookies, do this again with the rest of the cookies
